Corn & Crab Chowder paired with Miranda Chardonnay

Here's a delicious paring for you, direct from the Goshen Farmers Market:
This one is a texture, or "body" pairing. The thickness of the chowder need a full bodied wine, like Miranda's Chardonnay.
"A sophisticated, full-bodied wine. A floral bouquet apricot & peach, with hints of butternut and nutmeg. Perfect to serve with fish or poultry."
 
This is a wine that is served chilled and great for summer picnics. We are pairing it with this LOVELY Corn and Crab Chowder.
 

Ingredients

  • 6 bacon slices (Blue Moon Cattle)                              
  • 2 celery ribs, diced                
  • 1 medium-size green bell pepper, diced
  • 1 medium onion, diced               
  • 1 jalapeño pepper, seeded and diced
  • 1 (32-oz.) container chicken broth                
  • 3 tablespoons all-purpose flour
  • 3 cups fresh corn kernels (6 ears)                
  • 1 pound fresh lump crabmeat, drained and picked*
  • 1 cup whipping cream
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
     
  • 1/4 teaspoon pepper
     
  • Oyster crackers
  • Garnish: chopped fresh cilantro

Preparation

  1. 1. Cook bacon in a Dutch oven over medium heat 8 to 10 minutes or until crisp; remove bacon, and drain on paper towels, reserving 2 Tbsp. drippings in Dutch oven. Crumble bacon.
  2. 2. Sauté celery and next 3 ingredients in hot drippings 5 to 6 minutes or until tender.
  3. 3. Whisk together broth and flour until smooth. Add to celery mixture. Stir in corn. Bring to a boil; reduce heat, and simmer, stirring occasionally, 30 minutes. Gently stir in crabmeat and next 4 ingredients; cook 4 to 5 minutes or until thoroughly heated. Serve warm with crumbled bacon and oyster crackers. Garnish, if desired.
  4. *1 lb. peeled cooked shrimp or chopped cooked chicken may be substituted.

Grilled Italian Sausage with Peppers, Onions and Arugula paired with Wodridge White.....its this weeks featured pairing.

What's great about the Goshen Farmer's Market?  We have such a wide variety of products.  You can crate your entire dinner from products purchased at the Market alone.  Today Im featuring the unique pairing of Woodridge White and Sweet Italian Sausage with Peppers.
The wine, a Miranda Vineyard award winner, is a blend of Chardonnay and Seyval Blanc. Just about everyone knows Chardonnay but Seyval is not quite as common.  It is a grape that is prevalent here in New England.  It produces whines with a crisp acidity and sometimes grassy type finish.  The crisp acidity and herbaceous type finish is what brings this pairing together and matches that of the herbaceous crispness of the green peppers.
What you are cooking? Sweet Italian Sausage from Blue Moon Farm.  The farm is located in Harwinton and one of our vendors here at the Market.
 Sweet Sausage links are what I like.  They sell for approx. $7.50 a pound
 The other ingredients you will need are Green Peppers, Onions, Garlic.  Those can be sourced from our produce vendors: Windy Hill Farm, March Farms, Beaver Meadow or Winter Winds should have peppers onions arugula and garlic.

Ham and Rose. It CAN be the perfect summer dinner


This blog will feature some interesting food and wine pairings derived from products offered at the Goshen Farmers Market.  This one, Ham and Rose.  Most people think of ham as an Easter food.  Well, it also makes an easy and delicious summer dinner.  Blue Moon Cattle, one of our Farmers Market vendors, offers All-natural Ham steaks.  They are currently $9.50/lb.  They are so easily prepared by making a mixture of mustard powder and honey (West Street Farm, at the Market, offers their fresh seasonal honey as well).  So, you blend these two ingredients (if you like more spicy..add more mustard powder.  If you like more sweet...add more honey) and brush onto the ham steaks.  I love to grill and it spares heating the house in the hot summer.  So, grill on medium heat until done.
The wine featured in this blog is, of course, from Miranda Vineyard.

Miranda is the home of our Farmers Market and our only purveyor of wine.  The wine is their Rose.  It sells for $16.99 a bottle.  A delightful honey bouquet exposing hints of cherries, strawberries and watermelon. Delightful to the palate. Pairs well with cold hors d’oeuvres or fruit....and wonderfully with ham.  Another great thing about this wine is that it is served chilled, perfect for summer.  And, you can TASTE it at the market(after 10am) as well.

In general, Ham has a light, sweet flavor, especially with the sauces that tend to go along with it. If you had a heavy wine, you'd drown out that flavor. A tart wine would taste funny with the sweet sauce. So you want to go with a gentle, light, semi-sweet wine.

You don't have to stop there.  There also many side dishes that can be created with fresh produce from the market.  We also carry breads and desserts as well.
